Quinoa & Chard Stuffed Portobello Mushroom
This was so easy!  I had the leftover quinoa cooked in shroom broth, so I steamed a portobello cap, diced chard, grape tomatoes, and broccoli for just a few minutes.  Melted earth balance into the cap, added dashes of garlic & onion powder and sea salt, topped with the chard and quinoa.  Voila!  Insta-kitchen-goddess
