… AKA, What Vegans Eat on Their First Day of Winter Vacation:

Breakfast:  Apple, coffee w/ vanilla soy creamer

Lunch:  Mixed greens salad w/ cucumber, grape tomatoes, and radishes in herbs de Provence vinaigrette; Vitamin Water

Snack:  Justin’s PB cups

Extended Happy Hour:  Vodka+OJ, oatmeal stout, champagne, red wine … yups!  Vacation starts!

Supper-time:  Raw cauliflower, sprouted blue corn chips

Bedtime:  Two vanilla cupcakes

Sometimes being healthy and happy means celebrating!

I have to own up.  ;-)

2 am: Kettle potato chips

Breakfast:  ProBar Core, coffee w/ soy creamer

Lunch:  Hummus wrap (w/ tomato, shrooms, radish, fresh dill, arugula, baby kale on ww wrap), Vitamin Water

Snack:  Whoopie pie, more coffee

Dinner:  Apple, another whoopie pie, glass of riesling

I was busy!  :-P
